Set 1, the signature yong tau foo noodles, from Pang’s Hakka Yong Tau Foo at Tampines 1, $7.90. πŸ₯’πŸ˜‹

What we had ($7.90):

Pang’s is the yong tau foo brand of Chef Pang Kok Keong, who ran the French patisserie Antoinette before going back to his Hakka roots. This outlet is in Tampines 1, 10 Tampines Central 1, right by Tampines MRT, and it is one of several Pang’s around the island.

The signature set comes as two bowls, and the noodles are what set it apart from a regular yong tau foo. They are thin, springy yellow noodles tossed in garlic oil, very fragrant, with a spoon of savoury minced pork and a scatter of spring onion on top. Simple, and it works.

The soup is the Hakka kind, clear and light, with a set selection of pieces rather than ones you pick yourself. In ours: a wedge of stuffed bitter gourd, blocks of stuffed tofu, golden tau pok, and a fishball, all soaking in the broth.

The bitter gourd is the piece to pay attention to. It keeps a clean, mild bitterness against the sweet broth instead of being boiled into nothing, and the meat filling inside is firm and well seasoned.

Go back and forth between the two bowls: a mouthful of garlicky noodles, then a spoon of soup to reset.

Overall: 4.2 / 5. πŸ˜‹πŸ‘πŸΌ Fragrant garlic-oil noodles and a clean Hakka soup with good bitter gourd. Would order the curry version next time.
