The har cheong gai is prawn paste chicken: chicken marinated in fermented shrimp paste, then deep-fried. Here it came in thick slices with a craggy, golden crust, and the meat underneath was tender and juicy, with that savoury, slightly funky prawn paste flavour running all the way through rather than just sitting in the batter.
The other bowl split the toppings between two roast meats. The char siew was dark and caramelised with charred edges and a sticky glaze, and the roasted pork was the crispy-skinned kind, cut into cubes with a crunchy crackling top and layers of fat and meat underneath.
Both bowls came with two halves of a soft-boiled egg, the yolks jammy and bright orange, and a little heap of achar, sweet-sour pickled carrot, cucumber and long beans that cut through the fried and roasted meat nicely. A small bowl of clear soup came with each.
Overall: 4.2 / 5. πππΌ Juicy prawn paste chicken, sticky char siew and crackling roast pork, all at nett prices near Clarke Quay. The har cheong gai is the one to get.
