What was in the red bowl ($3.50):
- A coil of thin yellow mee kia in a clear, peppery soup.
- Three big plump pork dumplings (水饺) — handmade-looking, juicy filling visible through the thin skin.
- A scatter of crispy fried ikan bilis (anchovies) for that crunchy-salty top note.
- Pieces of fresh choy sum for the green.
The dumplings had proper bite — minced pork with a bit of spring onion, no mushy filler. Ikan bilis gave the soup that umami pop.
