Modern hawker Hokkien mee with a salted-egg calamari upgrade — wok-fried prawn-stock noodles with prawns, sotong, pork lard, sambal, calamansi and salted egg fried calamari rings on the side. $6.50.
Modern hawker upgrade — Hokkien mee with a salted egg calamari side. $6.50 for the combo. Two classics on one plate. 😋
What was on the black tray ($6.50):
- Hokkien mee — wok-fried thick yellow noodles + thin bee hoon in a glossy concentrated prawn-stock gravy, with prawns, sliced sotong (squid), crispy pork lard cubes, bean sprouts and chopped chives.
- A piece of calamansi at the side for squeezing and a generous spoon of dark sambal chilli for the kick.
- A pile of salted egg fried calamari rings on a bed of lettuce — golden-battered rings coated in a creamy salted-egg sauce with curry leaves.
Squeezed calamansi over the hokkien mee, stirred in the sambal. Munched the salted egg calamari rings between bites — the rings were chewy with that signature salted egg golden coating.
Total: $6.50 for the upgraded combo.
Overall: 4.3 / 5. Hokkien mee had proper wok hei and the salted egg calamari rings were the perfect snack-side. Worth the upgrade over plain hokkien mee. 😍👍🏼
