You can tell good pistachio gelato at a glance: this one was a soft, natural pale green, not the lurid bright green of artificially flavoured versions. That muted colour is the tell-tale sign it is made with real ground pistachios.
And the taste backed it up. It was dense and silky in that proper Italian way (gelato has less air and less fat than ice cream, so it tastes more intense), with a deep, roasted-nut flavour and that lovely slightly savoury, faintly bitter edge balancing the sweet cream. None of the cloying fakeness you get elsewhere, just pure pistachio. The crisp wafer poked in gave a nice contrast to the smooth scoop.
Eating real pistachio gelato in Italy, where it is done best and costs a fraction of home, is one of those simple holiday highlights. At €3.60 it felt like a steal for something this good.
