A comforting, wallet-friendly hawker lunch: 鸭粿条面 (braised duck kway teow mee), $3. 😋

What I had:

This is everyday Teochew braised duck done cheaply and well. The duck is slow-cooked in a dark soy master stock until tender and infused right through with that sweet-savoury, five-spice braise, then sliced and laid over the noodles. The glossy braising sauce spooned over the top ties it all together.

Going for the mix of kway teow (wide flat rice noodles) and yellow noodles gives you two textures in one plate, the slippery soft rice noodles and the springier egg noodles, both soaking up the sauce. A scatter of fried shallots adds fragrance, and the clear soup on the side is there for sipping. A dab of chilli lifts it.

It is humble, hearty and full of that deep braised flavour that only a long-simmered master stock gives. At $3, it is the kind of honest budget eating that is getting harder to find.

Overall: 4.5 / 5. 😋👍🏼 Tender braised duck over mixed noodles in a rich master-stock sauce, comforting and cheap. Would re-order.
