Lobster King Pao Fan is the hawker stall at Our Tampines Hub that has made a name doing elevated pao fan, from the pricier lobster and scallop bowls down to more everyday ones like this Iberico pork version. Pao fan is the Teochew-style rice-in-soup dish, and here it comes the proper way: the rice served separately in a little side bowl so it keeps its texture, with the soup and toppings in the main bowl to pour over as you eat.
The broth was the standout, a golden, slightly creamy pour scattered with spring onion and softened onion, savoury and rounded with a real depth of flavour rather than a thin, watery soup. Draped over the top were slices of Iberico pork, cooked just through so they stayed tender, the fattier marbling of Iberico giving them a nicer bite than plain pork slices.
The side bowl of rice was topped with crispy fried shallots and floss, so you tip it into the soup and let the grains soak while still keeping some bite. Mix it all together and you get that comforting, brothy spoonful with tender pork, sweet aromatics and crunchy shallots in every mouthful.
For $6 this is a satisfying, well-made bowl, the Iberico pork a small upgrade that makes it feel a notch above the usual pao fan. A comforting one-bowl lunch that I would happily come back for, maybe stretching to the seafood versions next time.
